St. Louis Style Raviolis

Ingredients:
  • 2 Tablespoons of milk
  • 1 egg (or  2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder)
  • 3/4 cup Italian seasoned bread crumbs
  • 1/2 teaspoon of salt
  • Frozen cheese ravioli, thawed (or home made raviolis)
  • 3 cups of vegetable oil for frying
  • 1 tablespoon grated Parmesan cheese
  • 1 jar of spaghetti sauce

Directions:

Combine milk and egg (or egg substitute) in a small bowl. Place breadcrumbs and if desired, salt in a shallow bowl. Dip ravioli in milk mixture, and coat with bread crumbs.

In a large saucepan, heat marinara sauce over medium heat until bubbling. Reduce the heat to simmer.

In a large heavy pan, pour oil to depth of 2 inches. Heat oil over medium heat until a small amount of breading sizzles and turns brown. Fry ravioli, a few at a time, 1 minute on each side or until golden. Drain on paper towels. Sprinkle with Parmesan cheese and serve immediately with hot marinara sauce.

Homemade Bread Crumb Recipe:

Ingredients:

  • Bread (about 4 deli bulkie rolls)
  • 2 Tablespoons of oregano
  • 2 Tablespoons of basil
  • 1 Teaspoon of garlic powder
  • 2 Teaspoons of salt
  • A sprinkling of pepper

Preheat the oven to 300 degrees.

Rip the bread apart into tiny pieces (excluding the crust, if there is any). The pieces should look more like tiny flakes and less like litte bread balls. Add the seasonings in and mix the bread and seasonings together by hand. Spread the seasoned bread crumbs onto a cookie sheet covered with tin foil.

Bake for 10 minutes to dry the bread. Halfway through, stir the crumbs around for even baking.

Etsy Shout Outs

My sorority sister and dear friend, Jaymee, is the woman behind Oak Tree Apothecary! I won this "Lionheart" tincture in one of her contests a few months back and this is what kept me sane the week of my wedding! With just one drop in my morning glass of water, I felt continuously calmed down and felt emotionally energized. It almost felt like an emotional scaffolding that helped me through perhaps the biggest roller coaster of emotions I have faced so far in my life. Her Etsy features healing salts, essences, teas, mists, and tinctures! I would highly recommend this Etsy to anyone! You go, girl! Thanks! xoxo

2. Switch Plate Couture

This young lady is SUPER sweet and very accommodating! Every switch plate I own has been purchased through her and her Etsy. She does custom orders and has been doing so for many years. She is a fan of trading, so if any of you own an Etsy and are dying to try out one of her adorable switch plates, feel free to ask her about trading options! What I love most is that she loves damask--and that is by far my favorite print to see used in modern, home decor (also looks nice in vintage decor as well!)

OMG! I love this woman! She custom-made all of my bridesmaid's jewelry for our wedding in exchange for photos for her to use on her Etsy/pamphlets. I originally found her online on Blogger and then met her in person at the Wakefield Craft Fair. Everyone should go check out her Etsy AND her blogger! I would highly recommend her for anyone who needs a custom jewelry order, or simply just because!

Mountain Biking?!

Yes, we have decided to start mountain biking!

It's something we've both always wanted to do. We both love the outdoors, but we'd much rather be doing something active than just "being" in the outdoors. We're not really huge hikers, and Adam doesn't love running as much as I do, so we decided a few months ago we would invest in some bikes! Being tax-free weekend, Adam jumped right in and got this Trek/Gary Fisher bike that his buddy Greg recommended to him. As soon as he got it, he hit the trail right by the bike shop he got it at and loved it!

We are in the process of finding the perfect bike for me, as for some reason female bikes are harder to come by at the rate we're looking to spend. There are a few front runners, but we're still looking!

Here's Adam's bike!
